I love their foods and recently cooked up some fabulous parfaits with layers of chocolate chia seed pudding, coconut quinoa rice pudding, topped with mango, blueberries, goji berries and mint. Recipe is below if you're interested in making it yourself!

Parfaits with Cocoa Nib Chia Seed Pudding and Coconut Quinoa Rice Pudding
Made with layers of coconut quinoa rice pudding and cocoa nib chia seed pudding.

Cocoa Nibs Chia Pudding
1/3 cup Suncore organic chia seeds
1 cup coconut almond milk
1 tsp of vanilla extract
1/2 tablespoon of honey

Mix all ingredients together in a bowl and let set in refrigerator for at least 3 hours or overnight (best) or until thickens and chia seeds have gelled into pudding. Mix in Suncore Cocoa Nibs about an hour before spooning into glasses. 

Coconut Quinoa Rice Pudding
1/4 C cup Suncore organic Royal Rainbow Quinoa 
1/2 C coconut milk (regular or light) and additional for drizzle
1/2 tsp cinnamon
2 tsp coconut extract (can also use vanilla but will lose a smidge of the taste)

Prepare quinoa according to package (typically 2:1 ratio w liquid) but substitute coconut milk (like or regular) for the liquid, add in cinnamon and vanilla. Bring to a boil in a saucepan, stirring to combine all ingredients then reduce to simmer and cover for 15-20 mins or until all liquid has been absorbed and quinoa is tender. Drizzel with additional coconut milk and place in refrigerator to cool. 

Once both of the above are done, layer in parfait glasses with the chia pudding on the bottom and a layer of fruit in between the two and top with goji berries and fresh fruit. I used mango, blueberries and mint in mine which were a very tasty mix but feel free to explore other fruits. Enjoy!
